How can I change the submission fee from one currency to the another in wallet?

I think you first need to change currencies in stripe and then create a new wallet and link it to your stripe account. It should get the new currency.

It doesn't work. After I changed my default currency from HKD to USD in Stripe, removed my HKD bank account in Stripe, and create a new wallet in Pollunit, the currency I can receive from the new wallet is still HKD. How can I change it into USD?

Did you add a USD bank account to the currency? Usually, when creating a wallet, it should take the default currency from the stripe account.
