How can I just do two months of the Business Plan?

You can select the business plan and then in the checkout select "Single purchase" There you can select one or months to purchase.

Do I need to click 1-Month or 12-Month business plan to get to this option?

If I purchase 2 months on October 13, will I be able to download/access results on December 15 - or no since the two month window will have closed?

No, the account would not be valid on 15th of December.
